Kutchi chhaay(kutchi chhaas)

To make Kutchi Chhaay(Chhaas): 


1 cup yogurt
3 cups water(depend on consistency)
salt to taste
1 1/2 teasp. cuminseed powder
chopped coriander leaves(optional)

Method :

Blend 1 cup yogurt with 3 cups water, add salt & cumin seed powder. Serve chilled, garnished with chopped coriander leaves.Enjoy your nutritious kutchi chhaay/chhaas/beer.

Masala Chhaay(Chhaas)
Ingredients :
4 cups Buttermilk
Salt to taste
sugar to taste
A generous pinch of  jeera powder
1/2 tsp ginger+green chili paste or chopped
1 tsp chopped cilantro/coriander leaves (optional)

Tempering (Optional)
1 tsp oil or ghee
1/2 tsp cumin seeds
1/4 tsp asafoetida powder(hing)

Method :
1. Mix all the ingredients except tempering.
2.(if using)For tempering : heat oil in a small pan ,add cumin seeds and asafoetida powder(hing). Add  tempering to chhaay/chhaas.

Note :
If you do not prefer chopped chilies/cilantro/ginger in the buttermilk, add the ground paste. But that version will be spicier.
Enjoy Kutchi Chhaay with Odho, Bajre ja Rotla , Kadhi, garlic chutney , a big piece of jaggery and Khichdi or just to cool off on a hot summer day.
